My 2 Go-To Dressings: Tahini Maple Miso and Basil Avocado
I douse everything in these sauces. Warm, savory bowls. Crisp salads. Roasted veggies. Wraps, tacos, scrambled eggs, my friends, my plants... Just wanted to see if you were still reading. I encourage you to taste these as you go - salt level and thickness are a v. personal preference, so make 'em your own!
Tahini Maple Miso Dressing
1/3 c lemon juice (2-3 lemons)
1 c tahini
1/4 c maple syrup
1/2 t salt
pepper to taste
1/3 cup olive oil
2 T miso dissolved in 1/4 c water
Whisk all ingredients. Store in the fridge, adding more water to thin as necessary, for up to 1 week.
Basil Avocado Dressing
1 avocado
2 big fistfuls of fresh basil leaves (about 1/2 c loose leaves)
1/3 c olive oil
1/2 t salt
1/4 c lemon juice (1-2 lemons)
water to thin as necessary
Food process all ingredients. Store in fridge, adding water to thin as necessary, for up to 5 days.
